How to make delicious Organic Vegan-Keto Berry Green Smoothie!

I’ve always loved summer… ever since I was a wee child! Summer was filled with so many fun activities to do outside! Especially mingling with friends and family during the summer holidays in the U.S.! 

Ah… good times!

As much as I have always loved this season, living in the higher elevation Wasatch Mountains not only means being closer to Mother Earth (yay!), but also much closer to the big bright sun.  

While I did receive a heads-up prior to both the purchase of my home and move (I moved-in on May 1, 2021) on how hot it can get up here during July, I hadn’t fully realized just how intense it can be until July 2021 announced its presence. 

The temperatures skyrocketed! 

Cue the instrumental opening to the song, “Smooth” by Santana…man, it’s a hot one! (Ah, the 90s)

This would be the first time that I experienced this level of heat intensity here in good ol’ Utah. On the plus side, I’m grateful it’s more of a dry heat here.

According to my neighbors and coworkers, this past July was more intense than previous summers. What a relief that was to hear!

So without having A/C, to help cool off I was inspired to start creating tasty smoothies with a spin on my Vegan-Keto nutritional guidelines. A choice of nutrition source for me that was inspired by my inner wisdom! 

One of my creations that I concocted, I call “Organic Vegan-Keto Berry Green Smoothie”! If you also enjoy smoothies (especially to keep cool in the summer), I recommend that you give this recipe a whirl!

Ingredients:

  • ½ C Organic Raspberries
  • ½ C Organic Blueberries
  • 1 Branch (or rib) of Organic Celery
  • 1-2 T of Organic salted Peanut Butter (can use Almond Butter if you prefer)
  • 1 tsp Honey (can substitute with Monkfruit Sugar-Golden or Stevia for more of a Keto focus)
  • 1 C Organic Spinach
  • 1 tsp Organic Cinnamon
  • 1 tsp Organic Cardamom
  • 1-2 T Organic MCT Oil
  • ¼ C Coconut Water-Pure (Optional- I used C2O Coconut Water Brand)
  • 5-6 Ice Cubes
  • A pinch of Salt to taste (I used the Redmond Real Salt Brand that’s mined in my home state. I would recommend Himalayan Salt or Sea Salt also)

Instructions:

  • Blend ice cubes in empty blender until crushed. This will help make the beverage a thicker consistency rather than a mere liquid fruit drink.
    • Option: you can choose to freeze the fruit and omit having to use ice cubes. This will also help with creating the preferred consistency of a smoothie.
    • Note that it’s best for liquids and softer (high moisture) foods in first & harder solid frozen foods in last. The liquids at the bottom of the blender will absorb the mixed-in solids on the top.
  • Combine remaining fresh ingredients into blender.
  • Blend starting at the lowest setting for about 30 seconds and then switch to the next setting for another 30 seconds.
  • Pour mixture into desired beverage container.
  • Enjoy your refreshment! 

I used my Ninja blender (a kind birthday gift from my dear dad years ago) to whip up all the ingredients as listed above. And voilà – this delicious smoothie was created!

When I took my first sip of this creation, it was like diving into an inviting tropical oasis filled with so much love!

Delicious and so refreshing!

As a bonus, I feel that this recipe is friendly to both Vegan-Keto and Vegan nutritional guidelines (and Keto as well with some minor modifications)! It can be a refreshing snack as well as part of your breakfast!

With my experience creatively working with the heat in this new delicious and healthful way this past summer, I’m confident that I’ll be better prepared to keep cool during summer next year! 

It’s like the saying goes: “when life gives you lemons…make lemonade”! Or in this case Organic Vegan-Keto Berry Green Smoothie!
